Grilled Apple and Cheese Sandwich

This fun recipe is great for a night when nothing but comfort food will do. Kids will love this whether they're diabetic or not!

Ingredients:

8 slices of sprouted wheat bread
2 tsp. butter or margarine
2 tsp. honey mustard
2 medium Gala apples
4 slices of part skim mozzarella
2 large raw carrots

Instructions:

Lightly spread butter on one side of each slice of bread. Spread the mustard lightly on the other sides.

Place a nonstick skillet over medium heat to pre-heat it. Meanwhile, assemble the sandwiches.

Place a slice of bread on a plate, butter-side down. Put some apple slices on the mustard side of the bread. Add a slice of cheese. Cover with another slice of bread, mustard-side down and butter-side up. Assemble the rest of the sandwiches the same way.

When the pan is hot, place a sandwich on it. Cook for about 2 minutes, or until the bottom side gets golden brown and toasty.

Flip the sandwich once and press it down. Allow it to cook another minute or two on the other side, until the cheese is melting and the bread is toasted.

Peel the raw carrots and use a mandolin set for thin cuts. Hold a carrot on a 45-degree angle and slice thin carrot slices. Serve carrot 'chips' on the side of your sandwiches. Serves four.
